The Institute for Culinary Education is a vibrant and integral part of the South Commons. As students, faculty and guests stroll down the Campus’ central green axis, they are rewarded with a welcome respite from the intensity of Campus life when they pass the ICUE’s contemporary dining terrace, awash in the aroma of fine cuisine, or the adjacent herb garden with its gentle Mediterranean aromas.
Organized around the main dining room, 10,000 square feet of wine study lab, garde manger kitchen, savory kitchen, demonstration kitchen, culinary lab and sweets kitchen, serve educational as well as social functions.
Sustainability is paramount in the selection of building materials such as single-ply PVC cool roofing, recycled flooring and wall covering, reclaimed wood paneling, and sun control and shading devices. The building’s success is directly linked to the transparency of the spaces; from the main dining room, patrons observe food preparation through glass partitioned walls, optimizing social and educational experiences.
